超級簡單又美味的香蕉蛋糕/Super Easy and Delicious Banana Bread



 











到底是香蕉蛋糕還是香蕉麵包?英文直翻應該是香蕉麵包,但對我而言這更像是蛋糕。不管怎樣,這都是我和馬克最愛的香蕉蛋糕食譜!做法超級簡單,但烤出來的香蕉蛋糕真是無敵美味!通常馬克等不及蛋糕冷卻就已經吃了三分之一。

原本的食譜是來自於這裡。參考了其他人的建議,然後拿掉胡桃(我們倆都不愛鬆軟蛋糕夾著脆硬胡桃的口感),就是我們最愛的版本囉。

材料:
奶油-1/2杯(室溫軟化)
白砂糖-1杯
雞蛋-2顆
香草精-1小茶匙
檸檬汁-1小茶匙
麵粉 -1又3/4杯
蘇打粉-1小茶匙
泡打粉-1小茶匙
-1/2小茶匙
酸奶油-1/2杯
香蕉泥 -1杯(大約需2至3根香蕉)

做法:
1. 烤箱預熱至325ºF。將9*5吋的烤模上一層薄油。
2. 取一個大的攪拌碗,用電動攪拌器將奶油和白砂糖打勻。再一次加入一個雞蛋,攪拌均勻後,加入香草精與檸檬汁。
3. 另取一碗,混合麵粉、蘇打粉、泡打粉和鹽。然後慢慢拌入步驟2中,直到混合均勻。
4. 最後,拌入酸奶油和香蕉泥,拌勻後放到烤模裡。
5. 在烤箱中烤約1小時15分鐘。將烤模自烤箱取出放置約十分鐘後,再將蛋糕轉移至烤架上讓其完全放涼即可。

家中有太多香蕉時,這是超級迅速又簡易的解決方式。由於要將香蕉搗成泥,最好就是使用熟透透的香蕉。而對我一個平常不吃香蕉的人,這個食譜最困難之處,就是等特地買來的香蕉慢慢熟透哪!

To me this is more like a cake than bread.  Anyhow, this is Mark's and my favorite banana cake recipe.  The process is easy, and the outcome is amazing.  Usually Mark has already eaten 1/3 of the banana bread before it completely cools down.

The original recipe is adapted from here.  Based on suggestions from others, and leave out pecans, then tah-da!  Our favorite banana cake recipe!

Ingredients
1/2 cup butter
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon lemon juice
1 3/4 cups all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup sour cream
1 cup bananas, mashed (about 2 to 3 bananas)

Directions
1. Preheat oven to 325ºF. Grease a 9x5 inch loaf pan. 
2. In a large bowl, cream the softened butter with the sugar. Add the eggs, one by one, and mix well.  Then add vanilla extract and lemon juice. 
3. In another bowl, combine the flour, baking soda, baking powder, and salt, stir into the butter mixture until smooth. 
4. Finally, fold in the sour cream and bananas. Spread evenly into the prepared pan. 
5. Bake for 1 hour and 15 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely.

This is a super quick and easy way to use excess bananas.  Fully ripe ones are the best when making this.  To a person like me who doesn't eat bananas, the greatest difficulty of this recipe is waiting for the bananas that are specifically bought to ripe!
