偽托斯卡尼風之義大利香腸湯/Tuscan-Style(ish) Sausage Soup


之前阿潘說我煮的湯都好花時間,今天就來介紹我最近的新歡—半個小時可完成的偽托斯卡尼風香腸湯。

在網路上看到這食譜就一直念念不忘要找機會嘗試—有麵有菜有肉有我最愛的湯,四個願望一次滿足!第一次做就沒有依照食譜指示,但煮出來依然好喝!我覺得是因為義大利香腸讓整個湯底風味提升。原本這道料理名字是托斯卡尼風香腸湯,但我沒去過托斯卡尼不知道那兒料裡的味道,又沒有遵循原食譜做法,所以只能稱作是偽托斯卡尼風吧。

材料(約三人份):
義大利香腸絞肉-0.5磅 
洋蔥-1/4大顆,切丁
蘿蔔-中等大小約1根,切約0.5公分寬的圓形
大蒜-一粒,切碎
羅馬蕃茄-三棵,切塊(原本食譜是用蕃茄罐頭,但我喜歡盡量用新鮮蔬菜)
-3杯(原本食譜是用雞湯,但我覺得義大利香腸肉末味道已經很夠了,就用水代替)
托斯卡尼大白豆-4盎司,沖洗乾淨並瀝乾
乾躁九層塔-1/4大匙
貝殼義大利麵-4盎司,不須煮過(我手邊剛好剩有車輪義大利麵,就沒另外買貝殼麵了)
新鮮菠菜-隨意(美國菠菜和台灣菠菜品種不同,我很喜歡這兒的菠菜,生吃也好好吃)
鹽和黑胡椒-適量

做法:
1. 加熱湯鍋,放入義大利香腸絞肉,炒碎並炒至變色。
2. 放入洋蔥丁、蘿蔔丁和大蒜末,炒至洋蔥呈現透明,紅蘿蔔變軟。
3. 加入蕃茄、水、大白豆、乾燥九層塔和義大利麵,大火煮滾後,蓋上鍋蓋轉小火,續煮至義大利麵約八分熟。
4. 放入菠菜,攪拌煮熟。
5. 加鹽和黑胡椒調味,即可起鍋享用。

有時候我沒加義大利麵,不想吃豆子時我就乾脆省略,各種吃法一樣美味。

My friend said that the soup I made takes way too much time.  So I am going to share my recent favorite soup which can be done within 30 minutes - Tuscan-style(ish) sausage soup.


I have always wanted to tried this recipe since I found it.  Sausage, vegetables and pasta - a very filling soup recipe.  I didn't follow the direction exactly the first time I made it, but it was still delicious!  I think it is the Italian sausage that adds the flavor.  The original name of this dish is Tuscan-style sausage soup.  I've never been to Tuscan and have no idea what Tuscan cuisine should taste like.  Since I never really follow the original recipe, I can only call it Tuscan-style(ish) soup.

Ingredients
0.5 lb ground italian sausage
1/4 large onion, chopped
1 carrots, cut crosswise into 1/4 inch coin slices
1 clove garlic, chopped
3 roma tomatoes, chopped (the original recipe uses canned tomatoes, but I like to use fresh ingredients as much as I can)
3 cups water (chicken stock was used in the original recipe, but I think it is flavor enough with the Italian sausage, so I use water instead)
4 oz cannellini beans, rinsed and drained
1/4 tablespoon dried basil
4 oz shell pasta (do not boil ahead of time)
Spinach leaves
Kosher salt, to taste
Fresh ground black pepper

Directions
1. Heat a heavy pot or dutch oven on medium heat.  Add sausage.  Crumble the sausage when you brown it.
2. Add onion, carrots and garlic.  Cook until the vegetables are softened but not browned.
3. Add tomatoes, beans, water, dried basil and pasta.  Bring to a boil and then reduce to a simmer.  Cover and cook until pasta is almost done. 
4. Stir in the spinach and cook until just wilted

5Season with salt and pepper and serve.
